The state of Oregon requires food employees who handle food, utensils, or food contact surfaces to obtain a Food Handler Card. Employees are required to obtain this certification within 30 days of their employment. If you are already certified as a Food Protection Manager (CFPM) you do not need a food handler card. How do I obtain a Food Handler Card in Oregon?

In Oregon, you can obtain your Food Handler Card online. To obtain your certification you must complete a training course and then pass an exam. This certification expires every 3 years from the date it was issued. For re-certification, you'll have to take an approved course and exam again.

  1. Foodborne Illness
    • The food handler shall be able to describe foodborne illness as an illness resulting from eating contaminated food
  2. The Role of the Food Handler in Foodborne Illness
    • The food handler shall be able to describe the 5 major mistakes that cause foodborne illness - inadequate handwashing, employees working while ill, cross contamination, inadequate final cooking temperature, inadequate temperature control
  3. The Role of Management
    • The food handler shall know that the manager sets the tone of what food safety activities occur or don't occur within the facility
  4. Handwashing
    • The food handler shall be able to identify situations when food handlers must wash their hands and identify the correct technique
  5. Employee Illness
    • The food handler shall know to call the person in charge at the food service facility when ill with diarrhea, vomiting, fever, jaundice or sore throat with fever
  6. Contamination and Cross Contamination
    • The food handler shall be able to define and identify physical contamination as foreign objects accidentally introduced into food. Food items may arrive already contaminated with dirt, and pebbles
  7. Final Cooking Temperature
    • The food handler shall be able to identify that cooking to the recommended temperature will kill disease-causing germs
  8. Temperature Control
    • The food handler shall be able to identify that potentially hazardous food will support bacterial growth when held at temperatures between 41 degrees Fahrenheit and 135 degrees Fahrenheit. The danger zone is any temperature between 41 degrees Fahrenheit and 135 degrees Fahrenheit
